Apple Cake

Ingredients-

3 eggs
6 oz vegetable oil
1/2 cup granulated  sugar plus 2 tablespoons + 3 to 4 tablespoons sugar for the apples
1 cup flour
6 oz milk
1 1/2 teaspoons baking powder
2 pounds apples- grated ( Gala, Fuji, Pink Lady, etc)
1/2 teas vanilla extract
1/2 tablespoon cinnamon powder

Preheat oven to 350*
In a medium size bowl beat eggs, sugar and oil on low speed for about 3 minutes.
Mix baking powder and flour in a separate bowl. Gradually add the flour and baking powder to the egg mixture alternating between milk and flour. Add vanilla extract.  Mix on medium low speed for 3 to 5 minutes. The batter will be the consistency of pancake batter. Place 1/2 of the  batter in a greased 9x13 pan. Bake for 15  minutes or until golden on top. While the cake is baking grate two pounds of apples. You can peel the apples if you would like. I choose to leave the peel on. Place the grated apples in a colander and squeeze all the juice out. (I placed the colander over another bowl to collect all the juice.  The juice is full of vitamin C and E). I choose to grind my apples in a food processor, it's much faster. If you choose to use the food processor cut the apples and remove the core. Mix the grated apple  with the sugar and cinnamon. Adjust sugar and cinnamon to taste. Place the apple mixture over the cake and spread with the back of a spoon. Pour remaining batter over the apple mixture. Bake 40 minutes or until golden brown. Let the cake cool down in the pan before you cut it. Enjoy!!

Trader Joe's Nourish All-In-One Facial Cleanser

Hi everyone!! Today, I'm going to review this All-in-one cleanser from Trader Joe's. It is dermatologist formulated to leave your skin clean. I've been using this on and off for about five years. Every once in a while I try something different, but I always return to this  favorite cleanser. I have normal to combination skin. It never leaves my skin feeling dry or tight. It removes all of my makeup without leaving any residue behind. It has a gel like consistency and lathers really well. It's also reasonably priced at $5.99. Hope that you will give it a try. :)

Tomato and Cucumber Salad

If you grew up in a Romanian household,  you've  probably had this salad before. I could eat this for breakfast, lunch or dinner.

1 cup of pearl tomatoes cut in half
1/4 cup finely chopped onion
1 small cucumber peeled, sliced and cut in half
1 tbs oil (I used grape seed oil)
2 tbs white vinegar
salt and pepper to taste

Mix all the ingredients in a small bowl with lid. Place in the fridge for a few hours, so the veggies can absorb the flavors of the oil and vinegar. You can also use regular size tomatoes, just dice them. Pearl tomatoes is all I had on hand. Enjoy!!
